报告人简介:

黄德建博士,现任职于新加坡国立大学终身教授,食品工程系副主任,新加坡国立大学(苏州)研究院首席研究员、生物医疗与健康创新平台主任。黄教授带领研究团队在分子荧光探针的设计合成与分析应用、水果蔬菜与中草药的生物活性成分鉴定、抗高血糖与减肥的功能食品、高通量筛选法的设计与应用、人造肉和3D生物打印等领域取得世界领先成果。发表230多篇学术论文,人选2014和2015年度汤森路透“高被引科学家”(农业科学类)、以及苏州工业园区科技领军人才(2014年)。黄教授予2014年创办苏州吴德生物技术有限公司,也是吴德健康新加坡私人有限公司创始人与非执行董事(2016年)

报告摘要:

How to feed 10 billion people by the year 2050? How can we fight chronic diseases (withfoods) and achieve healthy aging? Can we achieve sustainable development goal? These aregrand challenges we are facing today. In this talk, I will present the work we haveaccomplished from our lab with the aim to address these complex global problems. The topicsinclude: valorization of spent barlev grains (food by-products) into functional staple foods(noodle, rice, and bread) with high proteins and fiber contents yet negligible starch contentsreclaiming (from agricultural by-products) food bioactive constituents such as flavonoidsand resin-glycosides as nutraceutical ingredients for weight loss, hyperglycemia control, andanti-cancer activity.
